We are seeking a visionary and hands-on Restaurant Manager to lead our entire front-of-house team and embody the Daiu experience.
The Role:As the Restaurant Manager, you are the leader of the front-of-house operation and a key business partner. You will be responsible for the overall guest journey, the performance and development of your team, and the commercial success of the restaurant. You will set the standard for service, turning first-time visitors into loyal advocates for the Daiu brand.
Key Responsibilities:
Leadership & People Management:o Recruit, train, mentor, and schedule the entire front-of-house team to meet operational needs.o Foster a positive, high-energy, and collaborative team culture focused on education and guest satisfaction.o Conduct regular performance reviews and implement development plans for all FOH staff.o Manage all HR-related documentation and processes in line with company policy.o Guest Experience & Operational Excellence:o Be the ultimate ambassador for the Daiu concept, ensuring every guest receives an unforgettable and authentic experience.o Develop and maintain the highest standards of service, with a specific focus on training staff to expertly guide guests through the interactive dining process.o Proactively manage the restaurant floor, resolving any guest issues decisively and with empathy to protect and enhance our reputation.o Continuously analyse and improve all operational procedures to maximise efficiency and guest satisfaction.o Ensure all tabletop equipment is maintained, safe, and compliant with health and safety regulations.o Financial Performance & Business Acumen:o Take ownership of the restaurant's financial performance, including achieving sales targets and controlling costs (labour, COGS, FOH supplies).o Analyse sales reports, understand P&L statements, and implement strategies to improve profitability.o Manage inventory and ordering for all front-of-house supplies, including the bar and beverages.o Drive revenue through strategic upselling, promotional activities, and exceptional service that encourages repeat business.o Marketing & Brand Representation:o Work with ownership to execute local marketing initiatives and promotions.o Manage the restaurant's online reputation by responding to reviews on TripAdvisor, Google, and other social media platforms.o Build strong relationships with local businesses and the community to drive brand awareness.o Ensure the restaurant's physical appearance, including the fresh display counters, is always immaculate and on-brand.
Person Specification:
Proven experience as a Restaurant Manager in a high-volume, full-service environment. Experience with interactive or grill-based dining is a significant advantage.o An expert-level understanding of Korean BBQ and/or Chinese Hot Pot dining culture and etiquette.o A demonstrable track record of leading, developing, and inspiring large teams.o Strong financial acumen with experience managing budgets, P&L, and driving profitability.o Exceptional communication and guest relations skills, with the ability to be a passionate educator.o A proactive and hands-on leader who leads from the front, especially during peak service.o Excellent problem-solving skills and the ability to make clear decisions under pressure.o Thorough knowledge of health, safety, and licensing regulations.
