About Us



Tripolitania is a new independent restaurant in the heart of Harleston - and the

world's first Libyan-Italian fusion restaurant

. We mix

North African spice with Mediterranean heart

, celebrating the warmth, generosity, and spirit of both cultures.

We've only been open eight weeks and have already been overwhelmed by the response - fully booked weekends, glowing reviews, and a wonderful community of returning guests. We're proud of the food, the atmosphere, and the love that goes into every detail.

Now, as we grow faster than expected, we're looking for an experienced

General Manager

to take the reins of the day-to-day operation and help us move from "busy new opening" to "brilliantly run institution."

The Role



This is a hands-on, full-scope management role for someone who loves both the business and the buzz of hospitality. You'll lead the team from the floor but also have real input into the strategic running and future of the restaurant.

Your responsibilities will include:

Guest Experience:

Ensuring every guest receives a warm welcome, attentive service, and a memorable experience from start to finish.

Team Leadership:

Managing, training, and inspiring all FOH staff; setting standards for service, professionalism, and positivity.

Staffing, Recruitment & Rotas:

Hiring and onboarding staff, managing schedules, and maintaining efficient team coverage.

Training & Compliance:

Overseeing health & safety, food hygiene, and operational compliance; creating a culture of accountability and pride.

Finance & Budgeting:

Working with ownership on budgets, cost control, and forecasting to ensure the business runs sustainably and profitably.

Growth & Strategy:

Collaborating with the owners on the long-term growth and financial strategy of the business.

Marketing, Communications & PR:

Working alongside the owners and our social media manager to promote the restaurant, manage public relations, and tell Tripolitania's story with authenticity and flair.

Supporting the Kitchen:

Partnering with the Head Chef on logistics, staffing, and smooth coordination between kitchen and floor.

Planning & Events:

Preparing for busy periods, private events, and seasonal campaigns to keep the restaurant thriving year-round.

Customer Communications:

Managing reservations, guest feedback, and customer relationships - online and in person.

Tech & Systems:

Managing operational platforms such as the website, booking systems, EPOS, and other digital tools essential to a seamless service.

About You



You'll likely have:

Experience as a

Restaurant or General Manager

in a quality, busy environment. Excellent people skills - calm under pressure, warm with guests, and respected by your team. A solid understanding of both the creative and commercial sides of running a restaurant. Confidence with tech systems (EPOS, booking platforms, websites, etc.) and a data-driven approach to decision-making. A sense of humour, pride in your work, and a genuine love of hospitality.
You'll fit in perfectly if you're the kind of manager who leads from the front, believes in hospitality as an act of generosity, and wants to help shape something meaningful from its earliest days.
