Overview



Hawkstone is looking for a skilled Senior Brewer with a strong background in brewing operations and quality control. This is an opportunity to play a key role in production, ensuring consistency, efficiency, and excellence across all brewing processes.

What you'll do



Brewhouse and logistics



Plan and execute

mashes, run-off, boils, hop/whirlpool additions, cooling, yeast pitching, and fermentation management.

Manage cellar operations:

dry-hopping, trub purging, finings, transfers, centrifuge/filtration, carbonation, CIP.

Execute and manage QA checks:

gravity, pH, DO/TPO, CO? volumes, VDK, haze, colour, bitterness.

Packaging & Logistics



Packaging

keg lager and ale

Monitor

process parameters and lead design/process

improvement

and implementation (process loss, clarity, DO etc.)

Ensure specs are hit and documented:

fill volumes, CO2 and N2 concentration, DO/TPO, pack integrity, code/date.

Quality and compliance



Champion HACCP/SALSA/H&S principles

; maintain cleaning records and SOPs; drive traceability and right-first-time culture.

Lead root-cause analysis and corrective actions

to improve staff and product safety, yields, stability, and shelf life.

Lead sensory analysis session


NPD



Support recipe development, project trails and scale up

(including British hop transitioning)

Lead specification generation and lab submissions

(e.gnutritional info) and launch critical paths.

People & Process



Mentor

junior brewers and operators; deliver training on safety, process, hygiene, and quality.

Contribute

to production scheduling and raw-material planning

Manage

KPI reporting (extract, yield, loss, OEE, cost/hl).

Experience / Skills



Demonstrable capability within a production brewery with experience brewhouse, cellar, packaging and laboratory. A relevant qualification in brewing or brewing science is desired Comfortable with centrifuge/filtration, carbonation, and in-process adjustments. Proven experience writing and improving SOPs; data-driven approach to problem solving. Safety-first mindset FLT licence
