SENIOR CHEF DE PARTIE



Brown & Blacks is looking for a committed and efficient Chef De Partie to join our growing team and learn all there is to know about working in a professional kitchen.

We are delighted with the welcome we have received from the people of Scone. Our Bar and Kitchen are going from strength to strength, and we now need to grow our small but brilliant kitchen team to make sure we can cope with the demand for our delicious food, our fine wines, spirits, craft ales and lagers and our friendly welcoming atmosphere!

The role



As a Chef De Partie, it's your job to maintain high standards of hygiene; prepare meal ingredients for the Sous Chef; measure out dish ingredients and portion sizes accurately and deal with deliveries and stock rotation.

We want you to be the Sous Chef's closest assistant. Working your magic by being one step ahead with ingredients and preparations, making sure that everything is ready and in place for the Sous Chef to provide the best quality and tastiness of food for our customers.

You'll assist with the various kitchen duties, including but not limited to the following:

Setting up the kitchen before opening time or closing down the kitchen after service each day. Preparing each cooking station and making sure all are adequately equipped. Cooking a specific portion of each plated meal. Preparing salads and sauces as directed by the Sous Chef. Assisting with marinating, cutting, and precooking foods. Wrapping unused items and storing them correctly. Plating food creatively and doing your best to maximise customer enjoyment. Receiving deliveries and verifying that all ordered items have been delivered and are of good quality. Taking inventory of our supplies and notifying the Sous Chef of low or depleted stocks. Discarding all expired and spoiled food items stored in the stock rooms, refrigerators, and freezers. Performing cleaning duties and ensuring that workstations are adequately sanitised.

To succeed you'll need to



Demonstrate your passion, and never compromise on providing the highest quality, great-tasting food. Always keep your section organised and tidy and follow all health and hygiene regulations. Work at pace and make sure customers' expectations are continuously exceeded. Have at least one year's successful track record and experience as a Chef De Partie. Recognise that cooking in a high-pressure kitchen is hard work and consistently demonstrate plenty of self-motivation, stamina, and resilience. Be versatile and ready to learn every section of the kitchen. Always be kind, friendly, respectful, and helpful to every Brown & Blacks team member. Established in 2014, our mission is to provide great food and drink and even better times for our customers. We recently moved our Bar and Kitchen from Perth to the village of Scone, and our flying start is very much looking set to continue. In July 2024 this will be our tenth year of trading after previously being in the town centre.
