The Tall Trees Hotel is a brand new small but modern hotel, bar & restaurant opening in early March 2026 under independent ownership. We are searching for a talented Sous Chef to join us as part of our opening team, in a completely unique kitchen setting.
The hotel is located in the harbour town of Amlwch on the northern coast of Anglesey, boasting a 20 seater dining room alongside a bar area, games room and large garden & terrace ideal for bar snacks.
You'll be working under an Exec. Chef who's engaging, enthusiastic and with a keen focus on mentoring. The successful candidate will be responsible for running the services and maintaining day-to-day standards set by Chef, which must be adhered to.
The shift pattern will generally be evenings from Wednesday to Sunday, with a more than competitive rate of pay on offer to ensure we attract the person best suited for the role. Flexibility to adapt to the needs of a new business is paramount.

- Be an active, hands-on team player with excellent communication skills
- We have an open, customer-facing kitchen and so you'll be extremely presentable at all times and will value guest interaction & engagement
- Possession of culinary expertise and passion for the delivery of exceptional food and experiences. The menu is designed as a fresh food offering, with a focus on pan based work and balancing of workload
- Someone to join a close-knit team and fit in straight away- no space for egos!
This position is ideal for someone who is a motivated culinary professional and who is eager to be a part of a very exciting project with significant room for growth. Applicants should possess a genuine commitment to excellence in all aspects of kitchen management and food service.
Relevant current food hygiene qualifications/certifications are highly desirable, but not essential as refresher qualifications will be covered by the employer if necessary.
