Our new Sous Chef will have the following skills and experience:
Working alongside the Head Chef you will be responsible for the running of the kitchen, stores and ancillary departments. With a team eager to gain a reputation both locally and nationally, you will be responsible for overseeing the food and kitchen operations as well as helping lead and inspire our future chefs.
To assist the Head Chef with menu planning and development to deliver an amazing guest experience
Work closely and maintaining excellent working relationship with the Food & Beverage Team, and all other operational departments to ensure an effective food operation throughout service and for all events
Liaise with guests that have specific dietary requirements
Ensure the kitchens are compliant with Health & Safety regulations and to manage and uphold regular cleaning and kitchen maintenance schedules
Ensure Kitchen staff reporting to you demonstrate a professional attitude and are meeting proper Company appearance, personal hygiene and uniform standards.
To ensure a positive and motivated team environment which promotes good employee morale, ensures a high level of commitment and pride in the department and hotel
Assist with compliance of the company Hygiene Audit.
Ensure a high standard of stock control with responsibility for ensure all wastage and damages are kept to a minimum and logged with stock rotations also in place.
Communicate with fellow team members professionally, assisting wherever possible in the smooth operation of the kitchen, stores and ancillary departments
To assist the Executive Head Chef and Head Chef with the effective delivery of training and development plans to other team members.
Have a sound working understanding of all costs and charges relating to food operations and ensuring food cost of sales and GP margins are maintained at budgeted levels
Be responsible for ensuring all kitchen equipment and machinery is in working order and all repairs are reported
High standards of food preparation and presentation
Previous experience within a similar role
Passion for delivering quality food and excellent customer service
Hold an NVQ Level 2 in Food Preparation and Food Safety in Catering Certification
Be efficient, organised and work well within a team
