About the role...
We are seeking a Sous/Second Chef who can achieve great things under our Head chef and hardworking team. This candidate will be responsible for the running of the kitchen on the head chefs' days off.
Friels is a 5th generation, hospitality & heritage venue, bar & restaurant, visitor centre, motorhome park, new luxury lodges and self-catering accommodation in Swatragh, Mid Ulster.
Our public bar is one of the many reasons Friels is so special. From the original wooden bar & ceiling dating back to 1888 to the old-time memorabilia littered on the walls, it's an extremely unique place to work. Our stretch tented Hen House area is popular for celebrations, family events, day 2 weddings and full day casual weddings.
Our 85-seater restaurant with dessert and coffee bar added to our ever-growing offering. 60 seater public bar area, 80 seater beer garden area and 150 seater stretch tent area.
In September 2024 we opened Gorta, Swatragh's Famine Story, a new visitor centre and tourism experience above the premises. Catering bus and coach tours to large groups of international guests.
At Friels, we're passionate about using local produce in our menus and are looking for someone to join our kitchen team who's committed to that too!
Our kitchen is open from 10 am - 8:30 pm daily serving breakfast, lunch and dinner. We hope to extend these hours to 9am to offer a new breakfast/brunch menu Monday to Saturday. Experience in this area would be ideal.

Duties:
Help in the preparation and writing of all food menus
Be passionate about locally sourced food
Ensure that the kitchen operates in a timely way that meets our quality standards
Fill in for the Head Chef in planning and directing food preparation when necessary
Record daily HACCP documentation
Advise team members and waiting staff on food allergens
Have strong problem-solving skills
Order supplies to stock inventory appropriately
Comply with and enforce sanitation regulations and safety standards
Maintain a positive and professional approach with coworkers and customers
Strong communication & team motivational skills
Salary: 30k-40k Depending on experience
Additional training provided in-house and on-site as and when required.
Options of 4 days on - 3 days off or flexible shifts.
One weekend a month guaranteed off.
