Job Description

We are a Family Run Production Butcher business with a proud history of supplying the best hotels and restaurants in Glasgow for over 63 years. Due to recent expansion we require a new specialist Butcher to be responsible for the day to day production of our fresh Beef, Pork and Poultry.

The Role

Using your butchery skills to prepare meat to customer requirements experience in boning out and working with Dry Aged Beef Ensuring all meat is produced to the highest possible quality and accurate weight Work with colleagues to meet agreed targets and daily tasks Maximisation of profit and minimisation of waste Quality Control of all product outputs Ensure that all customers get personalised specifications of products as required Daily stock control and Rotation Cleanliness and ensuring all standards are maintained to meet all Butcher Safe and HACCP requirements

The Candidate

On hands Butchery experience that is based on meeting time dependant deadlines Methodical in approach to work ensuring that all work is recorded, prioritised and completed Must have experience in boning out and working with Dry Aged Beef. Must have good attention to detail Adaptable/flexible and reliable - change hours to suit needs Quick to learn and an approach of constantly looking to improve functions and processes Positive, can-do attitude with a strong work ethic Experience in similar role at a similar level for at least 3 years Excellent communication and interpersonal skills Hands on approach Ability to identify areas for change/improvement and putting forward recommendations
