Key Responsibilities
Prepare a wide variety of sushi, including maki, nigiri, sashimi, and specialty rolls.
Ensure all sushi dishes are made to the highest quality standards and presented beautifully.
Select, clean, and cut fish and seafood according to established safety and sanitation guidelines.
Monitor ingredient levels and assist in inventory management and ordering supplies.
Maintain cleanliness and organization of the sushi station throughout service.
Ensure compliance with food safety regulations and kitchen hygiene standards.
Collaborate with the kitchen team to develop new sushi menu items or seasonal specials.
Manage portion control to minimize waste and optimize food cost.
Requirements
Proven experience as a Sushi Chef or similar role in a high-volume or fine-dining environment.
Strong knife-handling skills and in-depth knowledge of sushi preparation techniques.
Understanding of Japanese cuisine, ingredients, and culinary traditions.
Ability to work in a fast-paced environment and maintain high attention to detail.
Knowledge of food safety and sanitation standards.
Strong communication and teamwork skills.
Flexibility to work evenings, weekends, and holidays as required.
Preferred Qualifications
Formal culinary training or certification.
Experience with menu development and creation of specialty rolls.
Previous experience interacting with guests at a sushi bar.
