The Oswin Project is seeking a dedicated Assistant Baker to join our new Baking Out facility in HMP Northumberland. You will work alongside Head Baker and be willing to enthuse and teach prisoners as we significantly expand our production capacity.
Since opening our first Cafe and Bakery inside HMP Northumberland in 2020, we have grown year on year and seen increasing demand for our baked goods. We are now opening our new Baking Out bakery facility inside HMP Northumberland. This will allow us to significantly increase production and meet growing demand.
We produce for our own group of enterprises, including:
Cafe 16 inside HMP Northumberland
Cafe 16 at Newcastle Cathedral
Growing Out Farm Shop in the prison grounds
We also supply a growing number of wholesale customers across Northumberland and the North East, with plans for significant expansion.

The Role
As Assistant Baker, you will work closely with our Head Baker to support all aspects of bakery production while playing a vital role in training and mentoring prisoners. This is an excellent opportunity for someone looking to develop their bakery skills in a meaningful environment.
Key Responsibilities:
Production Support: Assist the Head Baker in the production of baked goods across our expanded range
Quality Assistance: Help maintain consistent high standards across all products
Training Support: Work alongside serving prisoners, providing guidance and support in their skill development
Preparation Work: Handle ingredient preparation, mixing, and basic production tasks
Stock Assistance: Support stock management and coordinate with suppliers as needed
What we want from you:
Bakery Experience: Some experience in commercial bakery or catering environments
Basic Skills: Good foundational knowledge of bread making, pastries & basic baking techniques
Qualifications: Level 2 Food Safety qualification (minimum) with willingness to progress to Level 3
Learning Attitude: Enthusiasm to develop skills and learn from our experienced Head Baker
Team Player: Ability to work well in a team and communicate effectively with others
Commitment: Understand and commit to The Oswin Project's values of offering second chances to people with criminal records
Adaptability: Willingness to work in a prison environment and gain security clearance
