Assistant General Manager - Pilgrim Bar

Pilgrim Bar, one of Cowgate's best-loved student haunts, is looking for a dynamic, hands-on Assistant General Manager to support the leadership of this high-energy venue.

This is no ordinary AGM role. You'll play a key part in driving the day-to-day success of the business, thriving in a buzzing, ever-changing student scene, and helping to keep Pilgrim at the heart of Edinburgh nightlife.

What You'll Do

Support the General Manager in the day-to-day running of the bar, ensuring smooth operations and a great guest atmosphere. Lead from the front on shift, motivating and supporting the team to deliver exceptional service. Assist with recruitment, training, and development of team members. Help drive sales and footfall through the delivery and promotion of weekly entertainment, themed nights, and student-focused events. Support procurement, stock control, and supplier relationships. Monitor key performance indicators, assisting with GP, wage control, and cost management to support strong financial performance. Act as a visible, positive presence on the floor, helping to create the personality and energy that makes Pilgrim unforgettable.
What We're Looking For

Previous experience in a hospitality management or senior supervisory role (bar, club, or late-night venue experience strongly preferred). A passion for nightlife, entertainment, and delivering standout student experiences. Commercial awareness, with confidence supporting budgets, margins, and costs. A natural people-person with strong communication and team-building skills. Someone who thrives in fast-paced, high-volume environments and enjoys being hands-on.
