At Kochchi, we believe great hospitality starts with people. From our humble beginnings cooking up Sri Lankan street-food from a converted horsebox to the kitchen at Bonnie & Wild in Edinburgh, we've grown into one of Scotland's most celebrated independent brands, and we're now opening our first standalone restaurant and bar in Glasgow's vibrant West End.

We're looking for an Assistant General Manager who's ready to step into leadership from day one. You'll work directly with Kochchi's founders during the pre-launch and opening phase, shaping systems, building culture, and leading a passionate team that reflects the brand's energy and ambition.

This is a hands-on leadership role with a clear route to General Manager within the first year. It's ideal for someone commercially sharp, operationally disciplined, and eager to grow with an expanding, people-centred brand.

What You'll Do

- Lead daily restaurant and bar operations to deliver exceptional guest experiences.
- Recruit, train, and develop a confident, high-performing team.
- Manage rotas, stock, and payroll with focus on precision and cost control.
- Track KPIs across sales, labour, and profitability to support business growth.
- Maintain full compliance with health, safety, and licensing standards.
- Work with the founders on brand activations, events, and local engagement.
- Coach future leaders and embed a strong culture of accountability and pride.

What You'll Bring

- Proven experience as an Assistant Manager or Senior Supervisor in a quality-driven restaurant or bar.
- Sound understanding of P&L management, forecasting, and operational systems.
- A calm, confident leadership style that inspires teams and upholds standards.
- Excellent communication and guest-engagement skills.
- Organised, commercially minded, and passionate about great hospitality.
- Ambition to step up into full site leadership and grow with Kochchi as we expand.
