We are seeking an

Assistant General Manager - Bars

to join our team and support the Director of Bars in leading the bar operation at one of London's most innovative luxury destinations.

The Role

Reporting directly to the Director of Bars, the Assistant General Manager plays a pivotal role in daily operations, team leadership, and guest experience. You'll help shape the service culture, elevate performance, and ensure our bars operate with seamless efficiency and exceptional attention to detail.

What You'll Be Doing

Operational Leadership



Support the Director of Bars in managing all bar operations, including staffing, scheduling, inventory, and financial performance.

Supervise, guide, and motivate bar staff to deliver service excellence in line with 1 Hotel Mayfair standards. Oversee daily setup and breakdown of bar areas to ensure optimal efficiency, workflow, and ambience.

Guest Experience Enhancement



Foster a culture of warm, intuitive, and elevated hospitality that consistently exceeds guest expectations. Address guest concerns promptly and professionally, ensuring thoughtful solutions and follow-up. Monitor guest satisfaction and service quality, implementing improvements to enhance the overall experience.

Training & Development



Deliver coaching, training, and mentorship to elevate team skills, product knowledge, and service techniques. Lead regular team meetings and training sessions to communicate updates and reinforce standards. Work with the Director of Bars to create SOPs, training materials, and performance metrics that support continued growth and accountability.

Financial Management



Assist with budget planning and ongoing performance review, including revenue, cost control, and profitability. Implement initiatives to maximize revenue and manage costs without compromising quality or guest satisfaction. Oversee stock levels, carry out regular inventory checks, and ensure systems are in place to minimize waste.

About You

Previous leadership experience in hospitality, specifically within bar operations or beverage-led environments. Strong knowledge of beverages, mixology, and cocktail culture, with a passion for innovative, guest-focused service. A confident leader with exceptional communication skills and the ability to inspire and motivate diverse teams. Proven ability to achieve financial targets, introduce operational efficiencies, and drive performance. Passionate about sustainability, wellbeing, and delivering meaningful guest experiences.
