Working closely with the General Manager, you will play a key role in delivering outstanding guest experiences, driving operational excellence, and developing a motivated, high-performing team.
The Role
Support the General Manager in the smooth day-to-day operation of the restaurant and bar.
Lead, inspire, and develop both Front and Back of House teams to consistently high standards.
Ensure every guest receives a memorable, high-end dining experience that reflects our brand and values.
Champion the use of technology and AI systems to:
Reduce food and beverage waste
Streamline ordering and stock control
Maintain food safety and compliance through digital systems
Monitor and support key financial targets, including labour control, GP%, and revenue growth.
Drive sales and engagement through events, promotions, and exceptional guest interaction.
Uphold all health & safety, licensing, and compliance standards at all times.
What We're Looking For
Proven experience as an Assistant Manager or Restaurant Manager within a premium, high-end, or fine dining setting.
Strong leadership skills with the ability to motivate, coach, and inspire diverse teams.
A genuine passion for hospitality and delivering exceptional guest experiences.
Interest or knowledge in Japanese-Peruvian / Latin American cuisine and cocktails is desirable, but not essential - full training provided.
Solid financial understanding with experience in cost control and budget management.
Highly organised, adaptable, and confident working in a fast-paced environment.
A hands-on, proactive approach with excellent attention to detail.
