We're looking for an experienced and innovative
Bar Manager & Mixologist
to lead our bar operations. In this role, you'll design a seasonal cocktail menu that complements the kitchen, manage bar logistics, and guide a small team with hands-on leadership. You'll work closely with the Sommelier and Restaurant Manager to ensure a smooth, high-quality guest experience across all areas of service.

Bar Manager & Mixologist
, you'll oversee the full bar operation--from creative cocktail development and team management to inventory control and guest interaction. You'll have creative freedom to craft drinks rooted in seasonality, sustainability, and bold, balanced flavour.
This role combines day-to-day management with creative direction. You'll be a key part of our leadership team, bringing your passion for flavour, technique, and hospitality to every service.
Key Responsibilities
Lead and manage daily bar operations, ensuring smooth service and consistent quality
Design and execute a dynamic, seasonal cocktail menu using fresh, preserved, and foraged ingredients
Oversee bar mise en place, inventory, stock management, and ordering
Maintain high standards of hygiene, organisation, and safety compliance
Work alongside the Sommelier and Restaurant Manager to offer a cohesive drinks experience, including wine service support
Mentor and train the bar team in mixology, service standards, and ingredient knowledge
Engage guests with professionalism and warmth, offering thoughtful recommendations and education
Contribute to ongoing innovation, refining and evolving the drinks program regularly
About You
Previous experience as a Bar Manager or Senior Mixologist in a quality-driven, cocktail-focused setting
In-depth understanding of cocktail structure, classic and modern techniques, and flavour balance
Passionate about local, seasonal, and sustainable ingredients
Experience leading a team with a hands-on, supportive management style
Comfortable supporting a wine-led service alongside a strong beverage offering
Organised, detail-oriented, and composed under pressure
Excellent communication and people skills, with a genuine passion for hospitality
