We are a leading catering butcher in Fife. We are suppliers to many of the most prestigious hotels and restaurants in Fife, Dundee, Perth, Edinburgh, Lothians and the Borders, and are looking to recruit an experienced butcher on a permanent basis. This position may also be suitable for a candidate with hospitality experience, who has excellent knife skills and meat knowledge.
Duties
Working with beef, lamb, pork, poultry & Game
Cut, bone, or grind pieces of meat
Weigh, wrap, and package cuts of meat
Cut or prepare meats to specification or customer's orders
Store meats in refrigerators or freezers at the required temperature
Keep inventory of meat and ensure accurate record keeping
Clean equipment and work areas to maintain health and sanitation standards
Butchery
Butchery duties to include preparing and cutting meat including beef, lamb, pork, venison, bacon, poultry and game to customer's exact specification in a factory environment to the highest standards. Fulfilling daily orders, ensuring a safe and clean workspace at all times. Assisting with daily clean up in all areas of the factory.
Butchers and meat cutters use sharp tools such as knives, grinders, or meat saws. They must follow sanitation standards when cleaning equipment, counter tops, and working areas in order to prevent meat contamination.
Work Environment
The work can be physically demanding. In addition, butchers and meat cutters typically stand all day, and often must lift and move heavy carcasses or boxes of meat supplies.
Because meat must be kept at certain temperatures, the cutting room operates at a controlled temperature.
Butchers and meat cutters, must keep their hands and working areas clean to prevent meat contamination.

Hours of Work
You will be working Monday - Thursday 6.30am to 4.00pm, Friday 6.00am to 4.00pm and Saturday morning 6.00am to 12.30pm with one day off during the week. 39.5 hours per week plus attendance bonus for successful applicant. Work based pension scheme and very competitive wages (depending on experience).
