Job Description

We're seeking a skilled and proactive Butcher Manager to lead our butchery team within a busy, customer-focused butchers shop in Hampshire. This is a hands-on leadership role for someone who combines expert butchery skills with strong team management and a passion for high-quality, locally sourced produce.

Role Overview:

Full-time, permanent position Salary: 32,000-46,000 per annum, depending on experience 5-day working week (Tuesday-Saturday), 44 hours Staff discount, uniform, free parking, and performance-based incentives

Key Responsibilities:

Oversee all aspects of the butchery department, including staffing, stock, and compliance. Break down carcasses and prepare cuts to high standards of presentation and quality. Develop seasonal product ranges. Ensure full compliance with food safety, hygiene, and traceability regulations. Train and mentor junior staff, fostering a culture of excellence and accountability. Monitor margins, reduce waste, and manage supplier relationships. Deliver outstanding customer service and product knowledge on the shop floor.

Ideal Candidate:

5 - 10 years' butchery experience, with at least 3 years in a supervisory or managerial role Strong leadership and communication skills, with a practical, solution-focused mindset Proficiency in various butchering techniques and meat preparation methods Knowledge of HACCP, COSHH, maintain 5-star food safety ratings and food safety legislation Commercial awareness and ability to manage budgets and performance targets alongside the finance manager. Passionate about provenance, sustainability, and customer engagement
