Job Purpose



We are seeking a strong customer-focused Catering Manager to manage all aspects of our busy Bistro social enterprise, circa 400,000 income pa. The role will be responsible for managing all aspects of a busy food preparation and customer facing environment while ensuring exceptional food quality, service delivery, and customer satisfaction at all times. The catering team is focused on supporting companions, volunteers and staff to develop catering skills in a traditional social enterprise ethos, this role has an additional training/coaching focus to it. Key Responsibilities o Bistro Catering Operations: o Manage all aspects of the catering provision for the public, including developing monthly menus to include breakfast and lunch options, catering for all dietary requirements. o Developing the commercial aspects of the Bistro such as event planning throughout the year, e.g. Mother's Day, Easter, Christmas. o Companion Catering Operations: o Manage all aspects of the catering provision for the companions, focusing on promoting health and wellbeing. o Ensuring there is a catering provision year round, taking into account significant times in the calendar such as Ramadan, Eid, Easter and Christmas to ensure appropriate food provision is in place. o Team Management: o A confident leader of people with strong organisational & decision making skills. o Experienced in training, coaching or mentoring to support the ethos of the social enterprise. o All aspects of recruitment, training and supervision & support to the catering team. o Prepare and manage the team rota ensuring that key times are planned for e.g. breakfast and lunch service. o Provide leadership at all times with the support of the Operations Manager as needed. 2 o Budgeting & Cost & Financial Control: o Develop and manage the catering budgets. o Maintain accurate stock records for all provisions. o Track expenses and ensure profitability for the Bistro. o Source cost-effective suppliers and maintain good relationships. o Ensure all deliveries are checked against purchase orders & identify any discrepancies, and report immediately to suppliers. o Responsible for finance procedures for end of day takings. o Quality Control & Compliance: o Maintain high standards of food safety, hygiene, and presentation. o Be accountable for inspections undertaken by FSA. o Adhere to all procedures related to Health and Safety and COSHH regulations regarding food, equipment, materials and general safety. o Ensure that necessary repairs to kitchen equipment are reported immediately and repairs arranged, ensuring that unsafe equipment is taken out of use pending repair. o Ensure that the maintenance agreements for all equipment are current and arrange for the necessary checks at renewal. o Ensure that all kitchen areas are clean and free from hazards. o Ensure regular risk assessments are completed in consultation with the Maintenance Manager o Ensure that all accidents and incidents are reported, including notifiable diseases. o Ensure that all catering personnel maintain high standards of cleanliness, personal hygiene and appearance.

Attend meetings and actively contribute to the overall Community Strategy as required Perform any other tasks or duties deemed necessary by the Operations Manager

Working Conditions



Emmaus Village Carlton runs its business operations seven days a week and provides 24 hour,

7-day/week support to the Community. Days and hours of work will be agreed with the Operations Manager as appropriate.

Emmaus works with vulnerable people. Staff and volunteers must observe the proper demarcation and professional boundaries while performing their role. All roles within Emmaus Village Carlton are subject to enhanced DBS checks.

All staff must always act in a way which will maintain the good reputation of Emmaus Village Carlton, upholding the policies and procedures of Emmaus and striving to preserve good working relationships with Staff, Volunteers, Companions and Trustees. All staff are obligated to keep the appropriate and key personnel well informed of significant matters relating to the Community.

In Emmaus, volunteers are an important resource and make a vital contribution to Emmaus' aim to take action to help disadvantaged people. Emmaus therefore encourages, develops and supports volunteer involvement in its work.

Physical Requirements



Emmaus Village Carlton is currently based on one single 6 hectare site. There are three trading buildings open to the public, an 'Under 1 Roof' building for reception and sorting of donated goods, a waste recycling area, offices, gardens and grounds, playing fields, three residential houses for beneficiaries, and staff accommodation.

A minimum of 2 years' experience in the catering industry. Education / Professional Certification

Must possess a valid Intermediate Level 3 Food Safety qualification. Catering qualification up to level 3 NVQ. Allergen training
Skills

Knowledge of current food legislation in regards to food hygiene, Allergens and health and safety in the workplace. Able to prepare, cook and present food to meet quality, cost and food and health and safety standards. Experience of compiling menus, ordering commodities, food costing and general administration duties. Able to plan and organise own workload and that of a team. Knowledge of financial and bookwork systems keeping clear and accurate auditable records.
Knowledge and Commitment

Use of Commercial Catering Equipment Use of Domestic cooking appliances Knowledge of local and state sanitation requirements Able to follow Codes of Practice. (Please refer to the Health & Safety and Hygiene Practices).
