Mount Royal Hotel Edinburgh by the Unlimited Collection is seeking a charming and engaging Chef de Partie with a passion for service excellence.



You will report to the Head Chef, responsible for the smooth running of your designated section in the Kitchen. To ensure all food service areas achieve a consistently high standard of food presentation suitable to that of an ambitious 4-star Hotel.

A Chef de Partie will be responsible for:


Ensuring the cleanliness and tidiness of all working areas Preparing food to an exceptional standard to surprise and delight customers by adhering to the standards set by the AA Supervising the junior members of the Kitchen team including the Commis Cheds and Demi Chef de Parties Ensuring planning and preparation for service is completed in a prompt, organised and efficient manner Be aware of booking levels and occupancies, ensuring the correct quantities of food are prepared to avoid unnecessary wastage Promoting an effective and efficient communication culture throughout the department via team briefs and departmental meetings

To be successful in the role of Duty Manager, we require:

2 AA Rosette location experience Experience as a Chef de Partie Experience within a 4 or 5hotel advantageous Excellent organisational skills Excellent leadership skills and communication skills Experience with food ordering and stock management Understanding of GP% management The ability to work under pressure and be able to stick to strict deadlines The ability to work independently and as part of team
