To manage and develop all aspects of the culinary experience within the Utilita Arena Cardiff.
Curate bespoke menu offerings for our outlets including, but not limited to our L2 Restaurant, Re:Fuel Quick Service food outlet and our selection of corporate, private and hospitality bookings
Be responsible for the recruitment, development and rota of our casual kitchen, catering and waiting team.
Ensuring that the purchase, storage, production and service is to the highest standard and in line with the clients' requirements, whilst ensuring that maximum profitability is met and that all controls that are required by law are in operation
Take on responsibility for the management of food hygiene and compliance for all food outlets
Who you are
Competencies / Skills / Knowledge / Experience
Essential:
Strong experience of working in a multi- facetted catering environment
Large volume catering experience providing high quality products
Experience in developing menus, offerings and new products
Proven ability to plan /cost and execute a wide variety of menus in different styles in keeping with prevailing trends
Knowledge of food safety / health and safety legislation / allergens including food hygiene qualification
Proven ability to manage a successful team within a large multi-departmental structure
Ability to work with other in-house teams to offer bespoke options in line with client requirements
Desirable:

Proficient in the use of MS Office

What the role includes
To ensure the highest standards of food production and presentation at all times
To ensure implementation of operational standards including supply, purchasing, preparation, production and service, ensuring that all associated health and safety due diligence requirements are met
To ensure that the control and accounting procedures required are managed and met
To be fully conversant with food costing, gross profits, p/l accounts
To play a key role in developing all aspects of the venues catering offering by working closely with the relevant departmental heads to achieve enhanced reputation and increased sales across the venue portfolio
Work towards meeting and exceeding financial targets designated by senior management
To recruit all staff needed to run the kitchen and areas under your management (including L2 Restaurant) and carry out inductions into the department in line with company policy, recording all training given
To be fully conversant with and be able to implement the required standards of Hygiene to comply with EHO audits thereby achieving the required standards of Hygiene and Cleanliness in all food production areas, using products and cleaning schedules as required
