The Three Tuns - a historic pub at the heart of Bishops Castle - is reopening very soon, and we are looking for an experienced and motivated
Head Chef
to lead our brand-new kitchen team. This is a fantastic opportunity to shape the food offering of a much-loved pub, driving standards, creativity, and consistency as we begin an exciting new chapter.
Responsibilities
Lead, inspire, and manage the kitchen team, ensuring high standards of food quality and service.
Oversee the preparation, cooking, and presentation of all dishes.
Design menus and specials that showcase fresh, seasonal, and locally sourced ingredients.
Manage stock levels, food ordering, and supplier relationships to ensure efficiency and minimise waste.
Control food costs and maintain accurate records of stock and wastage.
Ensure the kitchen operates in compliance with food hygiene, health, and safety regulations at all times.
Train, mentor, and develop junior team members to build a strong, motivated kitchen brigade.
Work closely with the front-of-house team to deliver a seamless and enjoyable experience for guests.
Take ownership of kitchen organisation, including rotas, cleaning schedules, and maintenance checks.
Skills & Qualities
Proven experience as a Head Chef or Senior Sous Chef in a similar environment.
Strong leadership and team management skills.
Excellent knowledge of food safety, hygiene, and kitchen management.
Financial awareness with the ability to manage budgets, costs, and margins effectively.
Creative flair and a genuine passion for producing fresh, high-quality food.
Strong organisational and communication skills.
A hands-on, positive approach with the ability to thrive under pressure.
