The Peartree is a cornerstone of Edinburgh's pub scene - renowned for its lively beer garden, welcoming atmosphere, and central location near the University of Edinburgh. With The Counting House as our adjoining events venue, we cater to a wide range of private functions, from elegant weddings and corporate receptions to lively student gatherings. We are now looking to make the food offering enhanced and complement the customer's tastes.
The Role
As
Head Chef
, you will be responsible for leading and inspiring our kitchen team, delivering high-quality, consistent food for both the main venue and functions hosted in The Counting House. You'll have creative input on seasonal menus, ensure efficient kitchen operations, and play a key role in delivering memorable experiences for every guest.
Key Responsibilities
Lead day-to-day operations of the kitchen, maintaining excellent food quality and hygiene standards.
Design and execute innovative, seasonal menus that cater to pub patrons and tailored event catering.
Manage and mentor a team of chefs and kitchen staff, ensuring motivation, training, and development.
Oversee all food preparation for functions in The Counting House, adapting menus to suit diverse events and budgets.
Control stock, orders, and waste to maximise kitchen efficiency and profitability.
Work closely with the events and management teams to coordinate seamless service for large functions and special occasions.
What We're Looking For
Proven experience as a Head Chef or Senior Sous Chef in a high-volume kitchen.
Strong knowledge of menu development, costing, and kitchen management.
Experience in catering for large events or functions is highly desirable.
A leader who thrives under pressure and enjoys a fast-paced environment.
Passion for food, creativity, and a commitment to exceptional customer experiences.
Knowledge of food safety, HACCP and allergen management is essential.
