Job Description
Rare opportunity for a talented head chef to take over a successful, Bib Gourmand kitchen. You must be incredibly food-focused as you will report directly to the former head chef now managing the whole business and owner Jacob Kenedy (of Bocca di Lupo). You don't need to know about Louisiana cuisine but you must be ready to jump in with both feet - there is a lot of culture, technique and history that you will quickly need to be able to showcase to a general public that will often judge the entire cuisine on what your kitchen serves.
Key Duties
Standards must be flawless - you must demonstrate, inspire and demand perfection All food sent by the kitchen must be delicious, beautifully presented and on time Kitchen hygiene and organization must be on point at all times Food GP to be maintained, you will have access to software for logging invoices, costing recipes and inventory counts Staff costs to be kept to budget, rota sufficient to cover all shifts and prep and foreplanning to deal with holidays etc
You must
Have experience of at least senior sous at a restaurant serving food at a similar level (bib, rosette or at least somewhere on the map we've heard of) Be proactive, get things done and be realistic about timeframes Lead, communicate and inspire
