Location: Aldgate East Station, E1

Hours: 47.5 hours per week (Mon-Sun full flexibility required)

Salary: 49k-54k (per annum inclusive of tronc, experience based)

Job Overview


We are seeking a highly skilled and experienced Head Chef to lead our kitchen team in specialising inauthenticJapanese cuisine. The ideal candidate will possess a strong background in Japanese food preparation (including hot and cold), demonstrating excellent leadership skills while fostering a positive and productive kitchen environment. This role is crucial in maintaining the high standards of our restaurant and ensuring customer satisfaction through innovative menu creation and efficient kitchen operations. This is a great opportunity for a culinary leader with deep expertise in traditional and modern Japanese cooking techniques, including sushi, sashimi, robatayaki, tempura, ramen, and kaiseki.

Responsibilities



Oversee all kitchen operations, ensuring the highest standards of food quality and presentation. Develop and design menus that reflect seasonal ingredients and current culinary trends. Supervise and train kitchen staff, fostering a collaborative environment that encourages creativity and skill development. Ensure compliance with food safety regulations and maintain a clean, organised kitchen. Manage inventory, ordering supplies, and minimising waste to maintain cost efficiency. Collaborate with front-of-house staff to ensure seamless service and guest satisfaction. Monitor kitchen performance, implementing improvements to enhance efficiency. Stay updated on Japanese culinary trends and incorporate innovation where appropriate.

Requirements



Proven 2+ years experience as a Head Chef in a Japanese restaurant. Mastery in sushi, sashimi, kaiseki, hot dishes, and other Japanese cooking techniques, food safety standards, and kitchen management practices. Demonstrated ability to lead a team effectively while maintaining high morale in a fast-paced environment. Excellent communication skills, with the ability to liaise effectively with both kitchen and front-of-house staff. A passion for cooking and creativity in menu planning, with an understanding of current food trends. Fluent in English (fluency in Japanese is a plus)
