, one of London's most exciting and vibrant areas. This high-profile opening is an opportunity for an experienced Head Chef to lead the kitchen team, establish systems from the ground up, and set the benchmark for quality across the brand.
About the Role
We are seeking a talented, organised, and driven
Head Chef
to oversee the entire kitchen operation at our new Charing Cross site. From pre-opening set-up to daily service, you will be responsible for delivering high-quality dishes, training and leading the kitchen team, and maintaining exceptional standards in food safety and presentation.
This role is perfect for a Head Chef or experienced Sous Chef looking to take ownership of a new, flagship opening and make their mark in a fast-growing hospitality group.
Key Responsibilities Pre-Opening & Launch
Oversee all kitchen preparation for the launch, including menu testing and supplier setup.
Recruit, train, and onboard the kitchen team in Sushinoya's recipes, methods, and standards.
Ensure all kitchen equipment is operational, clean, and ready for service.
Establish stock control processes, ordering schedules, and prep routines.
Implement all food hygiene and HACCP protocols from day one.
Menu Execution & Quality Control
Prepare and oversee all menu items to brand specifications, including sushi, sashimi, hot dishes, and fried items.
Ensure every dish meets presentation, taste, and portion standards.
Maintain quality during busy service periods through efficient kitchen organisation.
Work with management to develop seasonal specials and menu improvements.
Team Leadership
Lead, motivate, and manage the kitchen team daily.
Allocate tasks according to skills and service requirements.
Monitor staff performance, provide coaching, and address issues promptly.
Maintain a culture of teamwork, respect, and continuous improvement.
Operational Management
Manage stock levels, ordering, deliveries, and waste control.
Monitor food cost percentage and implement measures to meet targets.
Schedule rotas and ensure adequate coverage while controlling labour costs.
Work closely with FOH to ensure smooth service and communication.
Compliance & Safety
Ensure the kitchen meets all food safety, hygiene, and health & safety regulations.
Keep all relevant records up to date, including temperature logs, cleaning schedules, and allergen information.
Conduct regular risk assessments and address hazards promptly.
Skills & Experience
Required:
Minimum 3 years' experience as Head Chef or Senior Sous Chef in a busy restaurant.
Strong knowledge of food safety, HACCP, and allergen management.
Excellent leadership and organisational skills.
Experience with high-volume service and fast-paced kitchens.
Desirable:
Experience in Japanese cuisine, particularly sushi and sashimi preparation.
Knowledge of Asian ingredients and cooking techniques.
Previous experience in a new restaurant opening.

35,000 - 45,000 depending on experience.
