The Role

We are seeking an exceptional

Head of Mixology

to lead our bar teams, craft innovative cocktail experiences, and elevate our beverage offerings to the next level. Reporting directly to the Director of Bars, you will be at the heart of our bar operations, overseeing all aspects of service, menu development, and team leadership across our hotel bars, with a special focus on Doveryard.

Key Responsibilities

Menu Development & Innovation:

Create seasonal, trend-led cocktail menus that reflect creativity, quality, and sustainability. Lead tastings and staff education sessions to ensure a consistent and inspired guest experience.

Operational Oversight:

Manage daily bar operations, enforce SOPs, monitor KPIs, and ensure compliance with health, safety, and brand standards.

Team Leadership & Development:

Mentor and inspire bar managers and staff, fostering a culture of excellence, collaboration, and continuous improvement. Deliver training sessions and workshops on mixology, service standards, and product knowledge.

Collaboration:

Work closely with culinary, purchasing, and other departments to source quality ingredients, optimize inventory, and deliver a seamless guest experience.

What We're Looking For

Proven experience in a senior bar or beverage management role within luxury hospitality. Track record of creating innovative cocktail menus, driving revenue, and achieving operational excellence. Strong leadership, communication, and team-building skills. Extensive knowledge of cocktails, spirits, wine, and emerging beverage trends. Passion for creativity, sustainability, and elevating guest experiences.
