We are seeking a skilled and passionate Viennoiserie Chef with at least 4 years of experience to join our new production kitchen as a Head of Department. The ideal candidate will have a solid background in pastry production, with a strong eye for detail, consistency, and creativity. You will be responsible for preparing high-quality pastries that meet our standards and satisfy our loyal and ever growing customer base.
Key Responsibilities
Prepare and bake a high volume and range of pastries according to established recipes and production schedules, ensuring quality control across three venues.
Monitor inventory of baking ingredients and supplies and report shortages as needed.
Ensure cleanliness and organisation of the baking station and equipment in accordance with food safety and hygiene standards.
Assist in developing new recipes and seasonal items in collaboration with the Head Baker and Bakery Manager.
Maintain consistency in portioning, shaping, and presentation of products.
Follow all health and safety guidelines, including allergen handling and HACCP procedures.
Lead bakers and pastry chefs during shifts; organise and direct tasks.
Provide daily guidance and support to bakers and pastry chefs to foster a productive and professional working environment.
Qualifications & Skills
At least 4 years of hands-on experience in a professional bakery or patisserie setting.
At least one years experience in a leadership role.
Strong foundational knowledge of dough handling, lamination, and pastry techniques.
Ability to work early mornings, weekends, and under pressure in a fast-paced environment.
Excellent time management, problem solving and organisational skills.
High attention to detail and commitment to quality.
Team player with great communication skills and a positive attitude.
Working Conditions
Standing for extended periods, lifting bags of flour/supplies (up to 25kg).
Collaborative team environment with opportunities to grow and learn.
Working Pattern
?Days: Typically 4 days per week (10 hour shifts) on a rotating schedule.
Breaks: Scheduled in line with working hours and in accordance with labor laws.
Flexibility: Occasional adjusted hours during peak seasons, product launches, or special events.
