Job Opportunity: Head Pastry Chef
We are seeking an exceptional chef to take the reins of our Pastry Division and the management of all food preparation and kitchen organisation across all pastry areas of the business with creativity, care, and culinary expertise.
As our Head Pastry Chef, you will be at the helm of the division and responsible for product development, advancement of skills and product innovation. Training and team development, refinement of practices and ensuring maximum team member and guest satisfaction; operating within budget and helping to ensure the continued success of the business.
Key Responsibilities:
Lead the creation and execution of world-class patisserie across Taymouth Castle and associated projects.
Be an ambassador for Taymouth Castle, upholding and promoting the values and vision of the business.
Inspire, train, and manage a team of pastry professionals, fostering a culture of excellence and continuous development.
Continuously proposing, creating, and implementing new menu ideas and dining concepts in collaboration with the Culinary Director.
Oversee kitchen organisation ensuring efficiency, cleanliness, and compliance with hygiene standards.
Ensure all purchases are seasonally appropriate, financially astute and processed through proper procedures.
Monitoring inventory levels through regular inventory checks and utilising stock efficiently and appropriately in accordance with business levels and seasonal changes.
Maintain and safeguard all kitchen equipment, ensuring proper use and regular maintenance.
Conduct regular team meetings to align goals, share updates, and maintain motivation.
Maintain the highest quality of all patisserie food items ensuring standard recipes are accurately recorded, constantly updated, and are being followed on a consistent basis.
Without compromise, prevent the use of contaminated products in any phase of food preparation in any area of the business.
Support the Culinary Director in strategic planning and execution of business initiatives.
Ensure consistent quality and presentation of all pastry items.
Work closely with the stewarding team to keep all kitchen areas to an exemplary hygiene standard; clean, organised, and orderly.
Perform additional duties as required to support the success of the culinary team.

A culinary degree or equivalent professional experience with a minimum of six years' experience in award-winning restaurants or luxury hotels, with proven leadership in a similar role.
Excellent communication, people skills and creative flair with a deep understanding of modern and classic pastry techniques. Enthusiastic about seasonality and foraged ingredients with a strong commitment to incorporating these elements into innovative and evolving product development.
