About Daiu Korean BBQ & Hot Pot:Daiu offers an authentic and immersive Asian dining experience, specialising in the interactive and social delights of Korean BBQ and Chinese Hot Pot. We are excited to expand our culinary offering with a new dedicated Japanese section and are looking for a skilled and passionate Japanese Cuisine Chef to join our passionate team.

The Role:We are seeking a talented and specialised chef to take full ownership of our new Japanese section. The ideal candidate will possess exceptional skills in both Japanese sushi preparation and hot kitchen dishes. You will be responsible for the entire lifecycle of Japanese menu items, from preparation to exquisite presentation, ensuring an authentic and high-quality experience for our guests.

Key Responsibilities:

Japanese Section Management:o Take full responsibility for the Japanese section, including sushi preparation and hot dish cooking.o Prepare, cook, and present all Japanese dishes according to authentic recipes and the restaurant's specifications.o Ensure all mis-en-place for the Japanese section is completed to a high standard and on time for service.o Maintain impeccable organisation, cleanliness, and efficiency of your section.o Culinary Execution:o Demonstrate expert knife skills for precise cutting of fish (Sashimi), seafood, and vegetables.o Prepare a variety of sushi and sashimi to a high standard, including nigiri, maki, and specialty rolls.o Cook and prepare traditional Japanese hot dishes (e.g., teriyaki, katsu, tempura, donburi, ramen toppings).o Prepare traditional Japanese stocks, sauces, and marinades (e.g., dashi, tentsuyu, teriyaki sauce) from scratch.o Ensure every dish is perfect in taste, freshness, quality, and visual presentation.o Quality & Safety:o Uphold the highest standards of food hygiene and safety, especially regarding raw fish handling.o Follow all HACCP procedures specific to the Japanese section, including strict temperature control and stock rotation.o Manage inventory of fresh fish and specialised Japanese ingredients.o Store all products correctly and ensure your workstation complies with health and safety regulations.o Hold a valid UK Food Hygiene Certificate (essential).
Person Specification:

Proven experience as a Chef de Partie, Sushi Chef, or specialized Japanese Cook in a restaurant environment.o Strong and demonstrable skills in all aspects of Japanese food preparation.o Essential: Expert-level knife skills and proficiency in preparing sushi, sashimi, and rolls.o Essential: Experience in preparing Japanese hot dishes and a solid understanding of traditional cooking techniques.o Knowledge of how to prepare fundamental Japanese bases like dashi stock is a significant advantage.o Understanding of food safety principles, with a specific focus on seafood safety, and a valid UK Food Hygiene Certificate.o Ability to work efficiently and calmly under pressure during busy service periods.o A reliable, hard-working, and positive team player who can integrate into a diverse kitchen team.o Strong communication skills and the ability to follow instructions precisely.
