Mr Smith's Parlour, Hoylake

Mr Smith's Parlour is a new, independent restaurant and cocktail bar opening soon in the heart of Hoylake. We're looking for an experienced and passionate Lead Cocktail Mixologist to be part of the opening team and help shape the drinks offering from day one.

This is a hands-on role for someone who genuinely loves cocktails, enjoys setting standards and thrives in a quality-driven, boutique environment.

The Role

Leading cocktail service and setting standards across the bar Creating, refining and maintaining the cocktail menu Preparing and serving high-quality classic and signature cocktails Training and supporting bar staff in cocktail preparation and service Working closely with the kitchen to complement the food offering Ensuring consistency, presentation, and quality at all times Delivering excellent, personable customer service Helping establish bar systems, prep routines and organisation ahead of opening Working service shifts as a key member of the restaurant and bar team

About You

Several years' experience as a cocktail bartender or mixologist Confident working at a senior or lead level behind the bar Strong knowledge of spirits, classic cocktails, and modern techniques Creative and inventive, with a good understanding of flavour balance Calm, organised, and professional under pressure Excellent communication and customer service skills Comfortable working independently and leading by example
