Job Description

HOLOS is a busy kombucha brewery in West Sussex. The successful applicant will get hands-on experience in a soft drinks manufacturing facility, and be a part of a small, friendly team.

You would learn the art of kombucha fermentation, bottling and canning at scale and gain valuable insights from a small but fast growing business environment as you work alongside inspiring entrepreneurs and positive team players.

Hours

: 40 hours per week, typically 9:00am - 17:30pm, Monday - Friday. Some shift work on occasion.

Salary

: 15,704 - 25,396.80 per year, dependant on age and experience

Holos is a busy, founder-led kombucha brewery based on the North Farm of the Wiston Estate. We produce a range of organic kombucha and sparkling teas. We are a social impact business, providing employment opportunities to victims of exploitation and trauma.

What will the apprentice be doing?



Day to day work will vary, but will include:

Brewing- Using custom-built, professional brewing and fermenting equipment. Measuring out ingredients, record keeping and keeping the brew house clean, tidy and well organised. Bottling & Canning- Our fast paced, canning and bottling lines each produce up to 1,000 units an hour, all whilst maintaining food safety standards and product quality. Boxing- Packing cases of product off the production line onto pallets ready for distribution. Cleaning- Pre and post-production cleaning and sanitising tasks. This includes a good mop at the end of a busy day! HACCP - you will be trained in the principles of food safety and gain a level 2 HACCP qualification. Once trained you will become part of the HACCP team. Record Keeping- We are an Organic and SALSA certified food business, as such good record keeping is critical for food safety compliance and traceability. Part of your job will involve taking ownership of certain aspects of these requirements. Teamwork- Joining team discussions and decision making, feeding into the production diary. You should be able to follow instructions, speak truthfully and ask for help if needed.

What training will the apprentice take and what qualification will the apprentice get at the end?



While studying this apprenticeship, you will learn to use a range of equipment, handling food safely and hygienically and to quality standards by working on production lines within the manufacturing plant. You will gain a solid grounding in most aspects of food production and manufacturing and have a good level of product knowledge.

Within the apprenticeship there is a Level 2 Apprenticeship Diploma in Food and Drink Operations.

Good manufacturing practice (GMP) in the food industry. Chemical and foreign body contamination prevention. Metal detectors and non-metallic detection. Allergen control. Labelling. Personal hygiene. Health and Safety at Work Act - responsibilities. Control of Substances Hazardous to Health (COSHH). Risk assessments and safe systems of work. Manual handling. Personal Protective Equipment (PPE). Situational awareness. Isolation and emergency stop procedures. Emergency evacuation procedures. Slips, trips and falls. Safety equipment: guards, signage, fire extinguishers. Environment and sustainability. Types of pollution and control measures: noise, smells, spills, and waste. Efficient use of resources. Waste reduction and waste streams. Recycling. Common faults and issues in food and drink production. Problem solving. Basic continuous improvement techniques: 5S, KAIZEN. Internal and external audits in the food and drink sector. Information technology: production equipment digital interfaces, virtual learning platforms, management information systems, word processing, email. General data protection regulation (GDPR). Documentation requirements for example, line records. Communication techniques - verbal and non-verbal. Reporting procedures. Principles of good team working.

not be in any other form of full-time or part time formal education (such as school, college or university) to be eligible to apply for an apprenticeship. Shorter course may not apply. You

have lived in the UK for a minimum of 3 years prior to the start of learning and be eligible to work in the UK. You

MUST

be located in an area local to the apprenticeship or be prepared to relocate in time to start employment and study. This apprenticeship is typically 17 months long.
