The Mixing & Finishing Operator is responsible for the final stage of batch preparation, which includes temperature monitoring, manual mixing, flavour incorporation, and operation of electric mixing equipment. This role ensures each batch achieves the desired consistency and quality before final processing or packaging. The operator must exercise good judgment, timing, and safety awareness to ensure a smooth, efficient workflow.
Key Responsibilities
1. Pre-Mixing Preparation
Review the production schedule and confirm the list of batches to be processed.
Weigh and stage all required flavourings or add-ins in accordance with batch recipes.
Prepare equipment and ensure the correct mixing attachments are in use based on batch type (e.g., dairy-free vs. standard).
2. Temperature & Batch Handling
Monitor batch temperatures using probes; ensure they stay within defined parameters before mixing.
Plan the mixing sequence by prioritising the hottest batches to prevent temperature drop-off.
Communicate with team members when moving hot containers; maintain a clear path to mixing stations and follow safety callouts (e.g., "Mind your back").
3. Mixing Process
Manually stir batches to confirm proper texture before mechanical mixing.
Add flavourings or additives at the start of the mixing process and incorporate manually.
Use electric mixers safely:
Insert paddle before activating.
Do not remove while still rotating to avoid splashing and burns.
Maintain control with one hand on the pot and one on the mixer.
4. Mixing Technique & Quality Control
Follow a defined mixing pattern (e.g., circular motions followed by center swirls).
Monitor visual indicators such as colour change, texture thickening, and surface finish.
Avoid over-mixing, which cannot be reversed--slightly under-mixing is preferable.
Adjust future batch handling based on batch consistency (e.g., reduce temperature for watery batches, increase for thicker ones).
5. Batch Transfer & Feedback
Transfer mixed batches to the designated handover station.
Receive and apply feedback to improve accuracy of temperature targets and mixing outcomes.
6. Environmental Control & Cleanliness
Once cooking is complete, adjust fans to regulate the cooling of remaining batches (if applicable).
Maintain a clean and dry work area at all times to ensure safety and hygiene compliance.
