We are a leading contemporary Chinese fine-dining restaurant located in the heart of Westminster. Known for combining authentic regional Chinese cuisine with modern culinary innovation, we serve a diverse menu featuring Cantonese, Sichuan, and Shanghainese dishes. With a rapidly expanding customer base,we are seeking a highly skilled and strategic Purchasing Manager to oversee procurement activities within our organisation. The successful candidate will be responsible for sourcing goods and services, negotiating favourable terms, and managing supplier relationships to optimise supply chain efficiency. Responsibilities
Oversee the full procurement cycle, ensuring a reliable and cost-effective supply of high-quality ingredients, kitchen equipment, and restaurant operational materials.
Develop and manage relationships with domestic and international suppliers, particularly those specialising in authentic Chinese ingredients.Maintain strong relationships with suppliers, negotiating terms that maximise value while minimising costs.
Conduct contract negotiations, manage supplier performance, and ensure compliance with food safety and regulatory standards.
Forecast demand, monitor inventory levels, and implement efficient purchasing strategies to support daily operations and seasonal menu updates.
Work closely with chefs, management, and finance teams to ensure purchasing aligns with business goals, budget requirements, and brand standards.
Analyse market trends, identify sourcing opportunities, and improve procurement processes to enhance efficiency and cost control.
Collaborate with internal departments to forecast demand and plan procurement accordingly.
Skills
Proven experience in purchasing management, preferably within the restaurant, hospitality, or foodservice sector.
Strong understanding of supply chains related to fresh produce, specialist ingredients, and imported Asian food products.
Excellent negotiation, communication, and vendor-management skills.
Ability to manage multiple priorities in a fast-paced environment.
Strong analytical skills and experience with budgeting and cost management.
Proven experience in procurement/purchasing management, preferably within a similar industry.
Strong negotiation skills with the ability to secure favourable terms.
Strong understanding of supply chains related to fresh produce, specialist ingredients, and imported Asian food products.
Excellent organisational skills with the ability to manage multiple priorities effectively.
Effective communication skills for liaising with suppliers and internal stakeholders at all levels.
Strong analytical skills and experience with budgeting and cost management.
Fluency in English; knowledge of Mandarin and Cantonese is an advantage.
