Job purpose:



To provide an efficient catering service to pupils including serving up of food and cleaning the kitchen to a high standard after breakfast, lunch and snacks as required. Ordering and maintaining stock levels, ensuring compliance with relevant Health & Safety and hygiene regulations. To be responsible for one week per school holiday to prepare and cook the main element of most meals for the forthcoming term. The position is therefore full time. The remaining week is for the deep clean allocations in the Kitchen and preparation of fridges and larders.

Specific duties:



1. Plan and design a two-week rota of meals menu

2. Produce literature for parents and students showcasing the meal choices

3. Prepare and plan breakfast, lunch and snacks when required within nutritional and dietary guidelines, including portion control, ensuring that breakfast, lunch and snacks as required are cooked and served in a timely manner following safe food hygiene standards. With a two-course lunch including vegetarian options and homemade dessert.

4. The Chef plans the meals, stock takes and takes responsibility for the ordering of food and taking in deliveries.

5. To provide well-balanced breakfast, lunch and snacks when required at designated times providing adequate choice.
6. Responsible for one week per school holiday to prepare and cook the main element of most meals for the forthcoming term.

7. Ensure the day-to-day running of the kitchen performs to appropriate high standards.

8. Ensure expenditure is kept within authorised budget limits.

9. Ensure correct health & safety and food hygiene procedures are adhered to at all times.

10. Ensure that defects to equipment are reported appropriately to maintain a safe working environment.

11. Report all health & safety concerns to the facilities manager and Head of Service.

12. Ensure that the standards of food hygiene rules comply with the Environmental Health service. Maintain standards and ensure that Food Hygiene certification is achieved at a 5.

13. Ensure the security of the kitchen store rooms is maintained at all times to provide a safe working environment.

14. Manage the kitchen and food standards to the highest standard accredited by the Food Hygiene body.

15. Manage kitchen hand & or assistants as required.

16. Provide the cooking, serving of breakfast, lunch and snacks as required and cleaning of kitchen area, as appropriate, in order to provide an effective service.

17. Attend training courses as required.

18. Comply with Health & Safety, Fire Regulations and other County policies.

Individuals in this role may also undertake some or all of the following:



19. To ensure that the kitchen and dining area are well-maintained and cleaned daily.

20. Collect student voice surveys & respond to children's likes and dislikes.

21. Take responsibility for any other requirements by the HOS eg: Function catering (pastries/Tea/Coffee etc)

QUALIFICATIONS

Food Hygiene Certificate - Level 5

Further training may be undertaken

EXPERIENCE

Previous experience of preparing breakfast, lunch and snacks as required within nutritional and dietary guidelines

SKILLS & ABILITIES

Use of kitchen equipment and knives for preparation

Preparation and cooking food

Ability to remain calm in situations when dealing with pupils

To ensure work is carried out in accordance with plans and Health and Safety, etc

Needs to understand how to respond appropriately when faced with difficult situations or when handling enquiries and complaints

Ability to carry out ordering and maintain stock levels

KNOWLEDGE

Knowledge of a range of procedures for preparing, cooking and serving food and relevant hygiene requirements

Knowledge of the use for a wide range of kitchen equipment
