About the Role

Our Dukes Golf Course plays host to an outstanding 5Championship Golf Course, situated on the edge of St Andrews. The club has an excellent reputation with a range of facilities on offer to its members and guests. We have a rare and exciting opportunity for a Demi Chef de Partie to join us at the Dukes Clubhouse, as we embark on exciting year in 2025. Led by our Head Chef, you will create superb dishes with locally sourced Scottish produce and be responsible for your own section, whilst gaining invaluable guidance and development.

About You

You will be an enthusiastic individual with previous experience as a Demi Chef de Partie or Commis Chef. A solid knowledge of culinary terminology and techniques is essential along with being competent in the following: meat, fish and poultry cooking, and the preparation of vegetables, basic stocks, soups, and sauce. You will also be able to demonstrate competencies and skills within the kitchen and enjoy working as part of a team.

?Your responsibilities will include:

Manage and oversee food production as directed by the Senior Team and to present it at the times required. Maintaining discipline in a fair and consistent manner including timekeeping. Have your own basic set of equipment including knives, pallet knives, mini scales etc. To understand the menus and operating procedure of the kitchen and run your section accordingly. Ensure all HACCAP systems are followed, and due diligence is completed on a day-to-day basis by you and the team. To be fully conversant with your departmental LQA standards.
?To be successful in this role you will have:

Similar experience in 5-star establishment. Culinary education in preferred but not essential. Good knowledge of culinary terminology and techniques
