Key Responsibilities of Senior Sous chef

Oversee the daily kitchen operation to ensure the smooth and consistent running of each shift Ensure food safety standars and allergens legislation is maintained at all times Engage and develop the team to reach their potential and aspirations To work with the team producing menus that demonstrate flair and commercial awareness taking into account current trends in the catering industry and meeting customer preferences. Ordering of stock and ensuring stock levels are at agreed levels in addition rotation apply in a systematic way Ensure all food purchases support the hotel's environmental and sustainability ethos and credentials Deliveries are checked for quality, relevant delivery records maintained, and ensuring proper storage of goods

What We're Looking For

Proven expertise as a Senior Sous Chef or in a closely related position Expert knowledge of food safety regulations and practices Skilled at encouraging and leading teams for great service and teamwork Experienced in understanding the financial performance of a kitchen including profit and stock control
