Heading up The Brasserie at Barnham Broom, we are seeking a talented and passionate Sous Chef to join our dynamic kitchen team. The ideal candidate will play a crucial role in supporting the Head Chef in the daily operations of our kitchen and deputising, ensuring that all dishes are prepared to the highest standards of quality and presentation. This position is perfect for an individual who thrives in a fast-paced environment and has a strong commitment to culinary excellence and food safety. 2 Rosette standards a must.

Duties

Assist the Head Chef in menu planning, recipe development, and food preparation. Supervise kitchen staff, providing guidance and support to ensure efficient operations. Oversee food production processes, ensuring adherence to quality standards and food safety regulations. Manage inventory, including ordering supplies and maintaining stock levels. Train new kitchen staff on proper cooking techniques, food safety practices, and kitchen procedures. Ensure cleanliness and organisation of the kitchen area, adhering to health and safety regulations. Collaborate with front-of-house staff to ensure smooth service delivery during busy periods.

Skills

Strong culinary skills with a passion for food preparation and presentation. Knowledge of food safety standards and best practices in a kitchen environment. Proven experience in team management and supervising kitchen staff effectively. Excellent leadership abilities to motivate and inspire the culinary team. Ability to work well under pressure while maintaining attention to detail. Strong organisational skills with the capability to manage multiple tasks simultaneously. A background in hospitality is advantageous, enhancing customer satisfaction through quality food service.
