Overall Purpose of the Job:
The job holder will be responsible for leading food preparation and ensuring the consistent quality of all dishes, with a particular focus on Italian cuisine. As the head chef at La Casanova, an Italian takeaway renowned for its pizzas, the individual will be expected to manage kitchen operations, oversee stock control, maintain hygiene standards, and prepare a wide range of authentic Italian specialty dishes especially pizzas, which are the core offering of the establishment.

Specific Main Duties
Oversee the selection, receipt, and proper storage of stock, ensuring the quality and accuracy of all deliveries.
Take full responsibility for maintaining an organised and hygienic kitchen environment, ensuring that all equipment and surfaces are clean and clutter-free.
Monitor and maintain appropriate temperature settings for food storage and cooking appliances.
Supervise and assist in the preparation of ingredients, including cleaning, cutting, marinating, and ensuring mise en place is completed efficiently.
Conduct routine maintenance checks on kitchen equipment and report any issues promptly.
Accurately measure and portion dish ingredients to maintain consistency in taste and presentation.
Ensure timely replenishment of ingredients and supplies in food preparation areas.
Lead by example in practising strict health, safety, and sanitation standards in compliance with food hygiene regulations.
Provide training and guidance to junior kitchen staff as required, ensuring adherence to kitchen procedures and quality standards.
Collaborate with management to continuously improve kitchen operations, menu offerings, and customer satisfaction.
General Duties
Prepare and cook a variety of complex made-to-order Italian dishes, with a focus on traditional pizzas, using fresh raw ingredients and authentic Italian cooking techniques.
Create and follow recipes for marinades, concentrated sauces, herb and spice blends, and ingredient fusions, as developed by the Head Chef or Culinary Designer.
Operate, handle, and maintain specialist pizza ovens and other kitchen equipment to ensure optimal performance and food quality.
Maintain the highest standards of food quality and presentation in line with customer expectations and market demands.
Oversee all areas of kitchen operations, ensuring smooth workflow and efficient service.
Ensure proper staffing levels and availability of supplies across all kitchen stations.
Coordinate with other chefs to ensure timely preparation and delivery of dishes while maintaining consistent food standards.
Enforce strict safety, hygiene, and sanitation protocols at all times in accordance with regulatory guidelines.
Assist in monitoring stock levels and ordering fresh ingredients and dry goods as needed to support kitchen requirements.
Lead, train, supervise, and mentor junior kitchen staff to maintain high performance and development.
Compile and submit operational reports as required by management.
Take charge of a designated kitchen section and perform duties efficiently within the assigned full-time working hours.

Job Knowledge and Qualifications:
Experience
Eligibility to live and work in the UK
Required level of English literacy
High calibre skills in preparing traditional and contemporary tandoori dishes and specialities originating from the Indian subcontinent
Relevant professional accreditation and culinary qualification
Hands-on, task orientated and resourceful
Minimum three years experience as a skilled chef or relevant experience.
