Objectives
To help oversee and develop the beverage offering and team with direct responsibility for wine service and beverage offering at both properties moving into full responsibility of wet liquor and bar.
To deliver friendly, efficient customer service and to create a warm and welcoming atmosphere to all of our guests, with the key aim of retaining and attracting customers.
Responsibilities
To ensure the teams' knowledge of wine and wine service is to the required level of excellence, continually developing and maintaining what we do.
To evaluate the performance of product and service on a continual/daily basis in order to recognise challenges and opportunities for the future and use this when working closely with the Restaurant Manager to continually improve what we do.
Develop our sustainable wine list to ensure that we are purchasing and selling at the best prices.
Taking responsibility in leading the bar staff whilst on their shift, and monitor beverage service duties through to completion.
Taking responsibility for the bar set up; cleanliness, chiller room, fridges and back of house areas.
To ensure effective daily communication with all other areas of the hotel, namely Reception, Bar and Kitchen.
To be a leader in developing the team's beverage knowledge.
Work alongside the Restaurant Manager and Beverage Manager to agree SOP's for wine and beverage service.
Throughout the year, this role of sommelier is required to combine with the food service team. During the winter months, there will be a dual role of restaurant supervisor, where you will be expected to assist the Assistant Restaurant Manager to run service.
Organisation of wine dinners during the quieter months with the aim to develop business opportunities.
To understand the importance of music, lighting, temperature, flowers, cleanliness and language in the department to ensure the correct ambience is maintained at all times
Maintaining high standards of hygiene, uniform and health and safety at all times.
About you
You have to be a flair and passion for service to achieve the highest of standards.
You have to be flexible, articulate and have a desire to progress to the next level.
You have to be a Sommelier who is keen to expand their knowledge and skill set.
You will be hard working, reliable, trustworthy and competent enough to work alone and have the experience and people skills to work within a team.
You must have worked in a similar restaurant or hotel environment previously, and
have
at least 2 years' experience as Sommelier.
Be calm and focused in a high pressure, busy environment.
You must have a good understanding of and the ability to manage food and beverage stock to help hit and maintain relevant targets.
Willingness to learn and a great commitment towards work.

Proactive individual who responds rather than reacts to the needs of the hotel and its guests.
Dedicated and committed to their current role, as well as their own development and progression within the hospitality business.

The hotel will depend on a Sommelier who is 100% committed to the success of the whole hotel, not just F&B.
Qualifications
Hospitality related qualifications are desirable, however not compulsory should your experiences prevail.
