looking for Sous Chef (Hot food kitchen)
Location: Aldgate East Station, E1
Hours: 47 hours per week (Mon-Sun full flexibility required)
Salary: 32.5k-35k

We are looking for a skilled and motivated

Sous Chef

to support our Head Chef in leading the

Hot Food Kitchen

at

SUSHINOEN

, specialising in authentic Japanese cuisine.

As Sous Chef, you will play a key role in ensuring the smooth day-to-day operations of the kitchen -- maintaining exceptional food quality, assisting in staff supervision and training, and upholding high standards of cleanliness and efficiency.

Duties



Support the Head Chef in overseeing daily kitchen operations, ensuring consistency in food quality, taste, and presentation. Prepare and cook dishes to restaurant standards. Supervise and train junior kitchen staff, ensuring adherence to recipes, portion control, and presentation guidelines. Assist in menu preparation, contributing creative ideas and seasonal suggestions under the Head Chef's guidance. Maintain a clean, safe, and organised kitchen in compliance with all food safety and hygiene regulations. Monitor stock levels, assist with inventory management, and communicate supply needs to the Head Chef. Ensure cost control by reducing waste and maintaining efficiency in food preparation. Collaborate closely with front-of-house staff to ensure seamless service and customer satisfaction. Step in to lead the kitchen team in the Head Chef's absence.

Requirements



Proven experience as a

Sous Chef

or

Senior Chef de Partie

in a Japanese restaurant. Strong skills in Japanese hot food preparation. Good understanding of kitchen operations, food safety, and hygiene standards. Ability to work effectively under pressure in a fast-paced environment. Strong teamwork and communication skills. Creativity and passion for Japanese food, with a willingness to learn and grow. Fluency in English required. Full flexibility to work across shifts, including weekends and holidays.
