We are looking for a
Lab Manager
to lead and coordinate production in our
London bakery and pastry laboratory
. This role covers three key areas:
pastry, bakery, and laminated doughs (viennoiserie)
.
You will be responsible for
overseeing daily production
, ensuring
product quality and consistency
, and managing a team of talented bakers and pastry chefs.
Key Responsibilities
Plan and coordinate daily and weekly production schedules
Supervise, train, and support the bakery and pastry teams
Ensure consistent product quality and adherence to internal standards
Maintain hygiene, safety, and organisational procedures in the lab
Drive continuous improvement and operational efficiency
About You
Proven experience in
bakery, pastry, and/or laminated dough production
Previous experience
managing or supervising a production team
Strong
leadership, communication, and organisational
skills
Hands-on approach and ability to work in a
fast-paced, growing environment
Passion for quality, craftsmanship, and teamwork
