About the Role
Graffiti Spirits Group runs some of the most recognisable bars and venues in Liverpool and Manchester, including Salt Dog Slims, El Bandito, Manolo, Duke Street Market, Nord, and The Hightown.
We're looking for a Bar Operations Manager who's calm under pressure, sharp on detail, and quick on their feet. This role isn't about running one bar--it's about keeping multiple venues moving in the right direction, each with its own pace, style, and demands.
No two workdays are the same. You might be on the floor at Salt Dogs one night, walking through stock and GP with a GM the next, or getting your hands dirty at a new site the day after. The key is adaptability--knowing how to shift gears fast and handle whatever the day throws at you.

You'll be overseeing a wide mix of venues, each with its own personality and pace:
The late-night chaos of Salt Dog Slims
The basement edge of El Bandito
The neighbourhood feel of Manolo
The polished experience of Nord
The fast-moving, all-day energy of Duke Street Market, with six kitchens and a central bar
The casual, high-quality service of The Hightown, our take on the local pub
They all need something slightly different, but the same high standards apply across the board. That's your job--keep the quality tight, the systems smooth, and the teams moving.
What You'll Be Doing
Overseeing wet-led operations across all sites
Working directly with GMs to maintain standards and consistency
Managing stock, suppliers, ordering, and cost control
Monitoring performance, margins, and weekly figures
Supporting new openings, refurbishments, and activations
Getting hands-on as needed--on the floor, behind the bar, or in the office
Spotting problems early and fixing them fast
Who You Are
Experienced in running multiple venues or a high-volume flagship
Confident with service standards, ordering, stock control, and numbers
Calm, direct, and capable of adapting to fast changes in priority
Not phased by late nights, early starts, or working across different concepts
Someone who leads from the front and doesn't hide behind emails
Comfortable moving between styles--from high-end to high-volume
