We're looking for a skilled and passionate Head Butcher to take the reins of our in-house butchery team at Pasture Restaurant. This is a full-time role for someone who lives and breathes butchery, with a deep respect for quality meat, precision cutting, and running a tight, food-safe operation.
As Head Butcher, you'll be responsible for the daily preparation of all our premium steaks, dry-aged burgers, and a variety of whole-animal butchery, from lamb and pork to poultry and beyond. You'll start your day setting up the daily cuts fridge, then move on to breaking down larger primal cuts with expert skill. Bandsaw experience is essential, as is a sharp eye for yield, consistency, and quality.
You'll be leading a small, skilled team, so leadership, clear communication, and a strong sense of responsibility are key. You'll manage training, oversee stock rotation using FIFO principles, ensure rigorous food safety standards, and collaborate closely with the kitchen to deliver beautifully butchered produce that's ready to hit the grill.
What You'll Need
Proven experience as a professional butcher (bandsaw experience essential)
Strong understanding of meat quality, dry-ageing, and preparation techniques
Excellent knowledge of food safety, hygiene and HACCP standards
Confidence in managing a small team, including training and daily supervision
Highly organised with strong attention to detail and consistency
Experience in stock control, ordering, and FIFO systems
A calm, positive attitude and a passion for craft butchery
