About us
We are a modern premium Japanese hand-roll sushi bar opening in Soho.
Built through years of global research, pop-ups, and collaborations, we focuse on immediacy, interaction, and atmosphere. It is a very creative, fashion-forward, music-led brand built around an interactive, guest-facing experience. Each hand-roll is made fresh, served directly into the hand, and eaten within seconds -- warm rice, cool fish, ultra-crispy custom nori.
This is a chef-led, counter-style restaurant where precision, rhythm, and consistency matter as much as creativity.
The Role
This is an entry-to-mid level kitchen role for someone passionate about Japanese cuisine and eager to grow.
You will work closely alongside our Head Chef, an experienced ex-omakase chef, and senior sushi chefs, gaining hands-on training in sushi preparation, counter service, and modern Japanese techniques.
This role is ideal for someone who is motivated, curious, and committed to improving their craft, with a clear pathway to progress into Chef de Partie and Senior Sushi Chef roles as the business grows.
Key Responsibilities
Support the sushi team with daily prep and service
Assist in preparing sushi rice, fish, garnishes, and mise en place
Learn and develop skills in temaki, nigiri, sashimi, and modern Japanese dishes
Engage confidently in a guest-facing, counter-style environment
Maintain cleanliness, organisation, and food safety standards
Work efficiently during service and follow direction from senior chefs
Contribute positively to kitchen culture and teamwork
Support pop-ups, collaborations, and special events where required
About You
Some experience in a professional kitchen or sushi environment preferred
A strong interest in Japanese cuisine and sushi craftsmanship
Keen to learn, improve, and take on responsibility over time
Comfortable in a creative, fast-paced, guest-facing environment
Reliable, focused, and positive under pressure
Proud of your work and detail-oriented
Ambitious, with the desire to progress to Chef de Partie and beyond
