Job Summary


We are seeking a talented and passionate Chef to join our culinary team. The ideal candidate will have a strong background in food production and a flair for creating exceptional dishes that delight our guests. As a Chef, you will play a pivotal role in the kitchen, overseeing food preparation, managing kitchen staff, and ensuring that all culinary operations run smoothly. This position requires excellent leadership skills and a commitment to maintaining high standards of hospitality and service.

Purpose of the Job

To be responsible for organization, control and efficient running of a nominated section (corner or department) of the kitchen, according to specified standards in compliance with set standards of quality & health and safety regulations.

Main duties and responsibilities

- Overseeing the operations of a kitchen in preparing and cooking all types of Kerala Vegetarian Curries.

- Prepare and present Kerala vegetarian starters and main vegetarian and thali dishes from the menu.

- Assisting and taking responsibility for the structure of the Kerala Vegetarian, Dosa and Thali menu.

- Ensuring all items and ingredients are available for menu production and also supervision of the junior kitchen staff with providing of necessary training.

- A duty to create new dishes and recommend to the Head Chef for added menu variety.

- Maintaining the food quality and oven temperature for different types of dishes as per standard set by the Head Chef.

- Sourcing quality ingredients as traditional cuisines from Kerala cuisines are hot and spicy, fresh, aromatic and flavored and using traditional Coconut, Chilly, Curry leaf, Mustard seed, Tamarind and Asafetida.

- Receive details of the menu requirements and quantities/portions needed from the Head Chef

- Plan and allocate jobs/tasks to kitchen assistants, ensuring that all items produced are according to standard recipes, portion yields and within agreed time limits and minimum wastage.

- Check that all food safety regulations and procedures are fully complied with. Report any defective equipment or safety hazards within the kitchen.

- Conduct any special daily or periodic duties (e.g. Refrigerate or temperature readings/recordings).

- Monitor and supervise the end of service procedures (e.g. return of unused food, cleaning).

-Assist with the security of the keys, personal property and the kitchen and stores area. Report any unauthorised persons in the area.

- Must have the ability skill and experience to cook the following Kerala vegetarian dishes to Michelin Standards.

- "Sambar, Parippu, Aviyal, different varieties of Kaalan, Pachadi, Kichadi , Poduthol, Thoran, Pulisherry, Olan , Puliinji, Pappadoms, Mooru, Kaya upperi, Sharkara upperi, Achar Pickle and different varieties of Payasam"

Job Types: Full-time, Part-time

Pay: From 26,200.00 per year
