in authentic tandoor cooking. The successful candidate will prepare and cook a wide variety of tandoor items to the highest standards of quality, hygiene, and presentation. Alongside tandoor duties, you may also be required to cover other kitchen sections, such as curries and biryanis, during days off and holidays.
Key Responsibilities
Tandoor Operations & Cooking
Prepare and cook a variety of traditional tandoor items including naan, roti, kebabs, tikka, and grills.
Operate and maintain the clay oven (tandoor) safely and effectively.
Ensure consistency in taste, portioning, and presentation of all dishes.
Plan and control food production to minimize wastage.
Additional Kitchen Support
Assist in preparing curries, biryanis, and other dishes as required to cover staff absences or busy periods.
Maintain versatility and flexibility across multiple sections of the kitchen.
Quality & Standards
Maintain the highest standards of food quality and presentation.
Follow recipe specifications and ensure authenticity of flavors.
Carry out regular tasting and quality checks.
Hygiene, Health & Safety
Comply with food hygiene and safety regulations (HACCP).
Maintain personal cleanliness and high kitchen hygiene standards.
Handle food, equipment, and storage safely and responsibly.
Record and monitor food storage and preparation temperatures.
Leadership & Teamwork
Lead by example in professionalism, punctuality, and hygiene.
Support, guide, and train junior chefs in tandoor techniques and safety practices.
Work closely with the Head Chef and kitchen team to ensure smooth operations.
Time Management & Organization
Prioritize orders effectively during peak service.
Prepare mise en place for the tandoor section ahead of service.
Deliver dishes promptly without compromising on quality.
Manage stock rotation and assist in inventory control.
Skills & Requirements
Minimum 2 years' experience
as a Tandoor Chef in a busy Indian restaurant.
Strong knowledge of traditional tandoor cooking techniques.
Ability to also prepare curries, biryanis, and other Indian dishes when required.
Excellent understanding of food hygiene and health & safety regulations.
Ability to work well under pressure while maintaining standards.
Strong teamwork, leadership, and communication skills.
Good organizational and time management abilities.
Flexibility to work evenings, weekends, and peak business hours.
