Shoryu Manchester is our first ramen bar outside London bringing authentic Hakata tonkotsu ramen to the good folk of Manchester. Located in the city centre, the restaurant is a short walk from Manchester Piccadilly Station and the Northern Quarter.

We are seeking a skilled and passionate Sous Chef to join our culinary team. As a Sous Chef, you will play a vital role in assisting the Head Chef in managing kitchen operations, ensuring high standards of food preparation and presentation. You will help create an inspiring environment for the kitchen staff while maintaining a focus on food safety and quality.

Duties

Assist in the preparation and cooking of meals, ensuring all dishes are prepared to the highest standards. Supervise kitchen staff, providing guidance and support to ensure efficient workflow and teamwork. Manage food production processes, including portion control, inventory management, and waste reduction. Ensure compliance with food safety regulations and maintain cleanliness in the kitchen at all times. Collaborate with the Head Chef to develop new menu items and improve existing recipes. Train new kitchen staff on food preparation techniques and safety protocols. Monitor stock levels of ingredients and supplies, placing orders as necessary to ensure smooth operations.

Experience

Proven experience as a Sous Chef or in a similar role within a restaurant or catering environment. Strong culinary skills with a solid understanding of food preparation techniques and kitchen operations. Experience in team management, with the ability to motivate and lead kitchen staff effectively. Knowledge of food safety standards and best practices in food handling. Excellent organisational skills with the ability to multitask in a fast-paced environment. A passion for cooking and creativity in developing new dishes is highly desirable.
